Sake: How to describe it accurately

Types and flavors of sake

Junmai and non-junmai sake can be distinguished.

Junmai sake is brewed with rice and rice crackers, whereas sake with "food alcohol" is not.

Milled rice can also be used to categorize sake

Sake is made from rice that has been milled, or polished, to remove the outer layer. This outer layer contains protein, which can add too much flavor to the sake if not removed. That's why it's important to mill the rice so that only a portion of it is used in sake production. By removing 30% of the husk, we are left with 70% polished rice. However, if the percentage drops below 60%, it is considered a "special brew" or "special pure rice wine". And when this lower polishing rate is used to make sake using the singing method, it's known as "singing sake" or "junmai singing sake".
